Salmon and potato croquettes

Easy and satisfying idea for lunch and dinner! You can make a whole batch and keep them in the fridge for up to a week.


Ingredients:

- 2 tins of salmon (better with bones to increase your intake of Calcium)

- 2 small potatoes (white or sweet, it is your choice)

- salt, pepper and parsley

-breadcrumbs


Method:

- boil and mash the potatoes

- mix in a bowl the mashed potatoes, salmon, salt, pepper and parsley

- roll them in breadcrumbs

- bake at 180 for 20-30 minutes until golden
