Ingredients (makes 2-3 serves):
• 1 can coconut milk lite
• 1 can lentils
• 3 cups of mixed vegetables (carrots, zucchini, broccolini)
• 1 tbsp curry paste
• Garlic
• Ginger
• Brown rice
Method:
- heat up the garlic and ginger in a pan with 1 tbsp of olive oil
- add the coconut milk
- add the veggies (I added the carrots first because they take longer to cook, then zucchini and broccolini and lentils)
- cover and cook for 15 minutes
- serve it with rice
