Turkey & Vegetable Burgers

Ingredients:

· 100 gr of turkey mince

· 1 sweet potato

· 1 cup of cooked spinach

· Salt & pepper

· Evoo

Method:

· Peel the sweet potato and cut it into little cubes. Boil it for 10 minutes or until soft;

· In a bowl, mix together the turkey mince, half the sweet potato and half a cup of spinach;

· Add salt, pepper and one teaspoon of evoo;

· Make 3 small burgers and cook them on a non-stick pan;

· Serve with leftover sweet potato and spinach.
