Ingredients (for 4 people):
· 100 gr of kale
· 30 gr of mixed nuts (I used pine nuts and almonds)
· 20 gr of evoo
· 1 small clove of garlic
· Chilli flakes
· Salt
· 30 gr of parmesan cheese (optional)
· 320 gr of whole wheat spaghetti
Method:
· Wash the kale leaves and eliminate the central and hard coast;
· Blanch in hot water for 3 minutes, drain and keep the cooking water;
· In a mixer put the kale, nuts, garlic, evoo, salt, chilli and parmesan;
· If necessary, add the kale cooking water until you reach a soft and creamy consistency
