I made this polenta chips the other night, Richard and I loved them. They are so easy to make and they are a great alternative to potato chips.
Polenta chips are perfect in winter, even better with a creamy cheese sauce on top!
Ingredients for 4 servings:
1 cup or 150g polenta chips;
enough water or stock to cover the polenta in the pot;
salt, pepper
your favorite herb: I used sage, but rosemary, thyme and oregano will also work well.
extra virgin olive oil spray;
Method:
cook the polenta as instructed on the packet, it should be ready in 10 minutes;
put the cooked polenta on a baking tray, spread it well on the tray;
let it cool down for at least 30 minutes;
cut in little rectangles and put them on another baking tray;
spray with extra virgin olive oil;
sprinkle with extra polenta;
bake at 180 degrees for 30 minutes;
let them cool down and enjoy!
