Polenta Chips

I made this polenta chips the other night, Richard and I loved them. They are so easy to make and they are a great alternative to potato chips.


Polenta chips are perfect in winter, even better with a creamy cheese sauce on top!


Ingredients for 4 servings:

  • 1 cup or 150g polenta chips;

  • enough water or stock to cover the polenta in the pot;

  • salt, pepper

  • your favorite herb: I used sage, but rosemary, thyme and oregano will also work well.

  • extra virgin olive oil spray;

Method:

  • cook the polenta as instructed on the packet, it should be ready in 10 minutes;

  • put the cooked polenta on a baking tray, spread it well on the tray;

  • let it cool down for at least 30 minutes;

  • cut in little rectangles and put them on another baking tray;

  • spray with extra virgin olive oil;

  • sprinkle with extra polenta;

  • bake at 180 degrees for 30 minutes;

  • let them cool down and enjoy!
